10 Minute Tilapia 

Quick and easy recipe for the nights you don’t have a lot of time and want something healthy.

1) Sauté riced cauliflower* with a tablespoon of avocado oil, teaspoon of lemon pepper and salt to taste in a pan. Stir occasionally until light brown

*Place one head of cauliflower in a food processor until finely chopped or buy the package of riced cauliflower at Trader Joes (my new favorite!)

  
2) Coat a 2nd pan with 1 tablespoon of olive oil before adding 2 peices of tilapia or your favorite white fish 

3) Squeeze 1 lemon on top of the fish before adding 1 tablespoon of capers and a splash of whitewine

4) Cook for 2-3 minutes and flip

5) Season with salt and pepper to taste

6) Add 3 cups of fresh spinach and cover

7) Cook for 2-3 minutes until cooked fully
 
8) Plate the cooked cauliflower

9) Top with spinach, tilapia and capers

10) Bon Apetite
