Clean & trim beans before roasting at 375 with garlic, olive oil, salt & pepper (30 minutes)
Cut off the top of 2 peppers and clean
Place peppers into a pan add teaspoon of olive oil, salt and pepper and bake (20 minutes)
Saute 1 tablespoon of minced garlic and a splash of olive oil in pan
Add 1 cup of cut mushrooms and stir before adding 1/2 lb of ground turkey and 1/2 cup of white beans
Cook for 10 min (until turkey is cooked throughout)
Remove peppers from the oven and spoon in the turkey mixture
Add shredded manchego or parmesan cheese on top and bake for 1o min (until golden brown on top)
Remove the beans and stuffed peppers from the oven and enjoy with your favorite glass of Chardonnay!
